Milk and dairy products are among the most consumed foods worldwide due to their nutrition and health benefits. However, it is also among the foods that are most imitated and adulterated. Various analyzes are carried out on milk and dairy products to protect food safety, consumer rights and health. One of these analyzes is Species Identification.
The purpose of Milk Species Identification is to prove the accuracy of the claimed milk and dairy products. The first aim is to prevent attempts to deceive consumers by mixing milk, which is valuable in terms of cost and nutritional value, such as buffalo milk, with different milks.
Methods used for Species Determination in Milk;
• Protein Based Methods
Electrophoretic Techniques
Immunochemical Techniques
Chromatographic and Mass Spectrometry Techniques
• Spectroscopic Methods
• DNA Based Methods
PCR-RFLP
Species Specific PCR
Real Time PCR
High resolution melting ( HRM) analysis
Droplet digital PCR (ddPCR)
Loop-mediated isothermal amplification (LAMP)
Next generation sequencing (NGS) technologies
