Aflatoxins are one of the mycotoxins that are formed as a result of the development of fungi (fungi) in the field before harvest, at the time of harvest or in storage areas after harvest. Aflatoxin is mostly grown and analyzed in the following foods:
- Dried fruits
- Oily dried fruits
- Spices
- Cereals
- Milk and dairy products
Apart from foods, it also develops in animal feeds and passes into the foods obtained from those animals with the consumption of feeds containing aflatoxin by animals. Aflatoxin analyzes in foods prevent many health risks from reaching consumers.
The negative effects of aflatoxin on human health are as follows:
- Liver diseases (hepatotoxic, hepatocarcinogenic)
- Carcinogenic and teratogenic effects
- Bleeding (intestines, kidneys)
- Immune system suppression
Considering the above health problems, the analysis of aflatoxin and other mycotoxins in foods shows that it is an important test parameter.
