What is Density and Relative Density?

  • Density (ρ): It is the mass of a substance per unit volume and is usually expressed in units of grams/cm³ or kg/m³. Its formula is:

  • Relative Density: The ratio of the density of a substance to the density of a reference substance (usually water). Relative density is a dimensionless value compared to density determination and improves the comparability of products at different temperatures and conditions.

These analyses are widely used in applications such as ensuring compliance with standards in food production, controlling product properties and detecting fraud.

Why Determination of Density and Relative Density in Foods?

  1. Verifying Product Quality: Density is important to verify the component ratios of food and to check compliance with standard values.
  2. Purity and Fraud Detection: Relative density is used to detect adulteration with water or other substances, especially in products such as milk, juice and oil.

Density and Relative Density Determination Methods in Foods

  1. Measurement with Hydrometer: Suitable for density determination of liquid products (e.g. milk, juice, wine). The hydrometer is immersed in the liquid and a density value is read according to the buoyancy of the liquid.
  2. Measurement with Pycnometer: Highly accurate density determination of liquid and viscous products. The density is calculated by measuring the mass of the product taken into a pycnometer with a certain volume.
  3. Measurement with Archimedes Principle: Suitable for density determination in solid and semi-solid foods. The product is first weighed in air and then immersed in water. Density is calculated according to the buoyancy difference. It is a reliable method for solid products.
  4. Vibratory Density Meters: It is one of the most advanced methods for density determination in liquid products. Measurement is made using the relationship between vibration frequencies and density.
