According to the Turkish Food Codex, fruit juices consist of four categories;
- Fruit juice is an unfermented but fermentable product obtained from the edible parts of a single fruit or more fruits, bearing the color, aroma and taste characteristics of the fruit or fruits from which it is obtained. Fruit rate is 100%.
- Fruit nectar, fruit juice obtained by adding water with or without the addition of sugars and/or honey, fruit juice produced from concentrate, fruit juice concentrate, fruit juice extracted with water, fruit juice powder, fruit puree and/or fruit puree concentrate and/or a mixture of these. Fruit content 25-99%
- Fruit juice concentrate, fruit juice, fruit pulp concentrate, fruit pulp or drink syrup containing substances. Fruit ratio is 10-24%
- Fruit flavored beverage is a type of beverage with a fruit ratio of 0-9%.
Fruit Ratio Determination is an important analysis to determine the compliance with the relevant regulations, especially quality control in fruit juices, and to determine the claimed fruit ratio.
