Fumaric acid is one of the strongest organic food acids. It is used for different purposes according to its properties. It is used as a flavoring agent for its sour taste and as an antimicrobial agent for its hydrophobic property. In general, the usage areas are:

Since fumaric acid is not hygroscopic and does not absorb moisture, it can be used in dry mix products. This advantage ensures that dry mix products do not cake or harden during storage. In the beverage, fumaric acid acts as a PH control agent and flavor enhancer.
