Determination of p-hydroxybenzoates


Benzoates are used as preservatives against yeasts and fungi. They are not very effective against bacteria and their activity is not dependent on acidity. Benzoic acid and benzoates are used in a wide range of food and cosmetic products.

The p-hydroxybenzoates used in foods can be listed as follows:

  • Ethyl-p-hydroxybenzoate (E 214)
  • Sodium ethyl p-hydroxybenzoate (E 215)
  • Methyl p-hydroxybenzoate (E 218)
  • Sodium methyl p-hydroxybenzoate (E 219)
There is no general usage limitation of the food additives listed above. Acceptable daily intake limit: 10 mg/kg body weight. In general, p-hydroxybenzoates are analyzed in food for several reasons:

In foods claiming to have no additives
For verification of ingredient information within the scope of food labeling obligation
To determine the amount of food contained
