Olive Oil and Types

ECN 42, also known as Equivalent Carbon Number 42, is a parameter sought to determine the difference between the content of triacylglycerols with ECN 42 determined by HPLC (High Performance Liquid Chromatography) analysis of oil molecules and the theoretical content of triacylglycerols with ECN 42.

ECN 42, a value calculated based on the carbon chain lengths of the fatty acids in the oil, is particularly useful in the process of determining whether olive oil is adulterated or adulterated. ECN 42 stands for “Equivalent Carbon Number 42”. This value is calculated on the basis of triacylglycerols (TAG) in olive oil.
