ISO 663 is a standard published by the International Organization for Standardization (ISO) and relates to the determination of fat content. This standard, whose full name is “Animal and vegetable fats and oils -- Determination of insoluble impurities content”, defines methods for the determination of the amount of insoluble impurities in animal and vegetable fats and oils.

Testing procedures can be carried out in accordance with this standard, especially in milk and dairy products or fats obtained from milk and dairy products. The substances expressed as impurities in the oils in question; mechanical impurities, mineral substances, carbohydrates, carbohydrates, nitrogenous substances, calcium soaps, or acid lactones, various resins, oxidized fatty acids, hydroxy acids and glycerides of these substances.
If the inclusion of soaps or oxidized fatty acids in the content of insoluble impurities is undesirable, a different solvent or procedure may be required. The situation can be evaluated according to the product to be tested or the analysis result to be obtained.
