Modified atmosphere packaging (MAP) is an innovative packaging method used to preserve the freshness and extend the shelf life of food products. This technique is based on the principle of changing the gas mixture in the packaging and is especially preferred for food products that are prone to spoilage.
MAP slows down the growth of microorganisms by optimizing the ratios of gases such as oxygen, carbon dioxide and nitrogen in the package. In this way, the freshness of foods is preserved and their flavors and nutritional values are retained for longer.
Modified atmosphere packaging can be applied in many different food categories:
The gases used in modified atmosphere packaging vary depending on the type of product and the mechanism of spoilage:
MAP offers great advantages in terms of food safety. When applied correctly, it reduces the risk of foodborne illness by limiting the growth of pathogenic microorganisms. However, it is of great importance to pay attention to appropriate storage temperatures and to comply with hygiene rules.
