What is Modified Atmosphere Packaging (MAP)?

Modified atmosphere packaging (MAP) is an innovative packaging method used to preserve the freshness and extend the shelf life of food products. This technique is based on the principle of changing the gas mixture in the packaging and is especially preferred for food products that are prone to spoilage.

What is the Working Principle of Modified Atmosphere Packaging?

MAP slows down the growth of microorganisms by optimizing the ratios of gases such as oxygen, carbon dioxide and nitrogen in the package. In this way, the freshness of foods is preserved and their flavors and nutritional values are retained for longer.

Advantages of Modified Atmosphere Packaging

  1. Extends Shelf Life: By lowering the oxygen level, it slows down the oxidation of food and the growth of microorganisms.
  2. Preserves Freshness and Quality: Preserves the natural appearance and nutritional value of foods for a long time.
  3. Reduces the Use of Preservative Chemicals: Prevents food spoilage naturally without the need for chemical preservatives.
  4. Reduces Food Waste: Longer shelf life reduces the rate of products going to waste.
  5. Increases Consumer Satisfaction: Consumers can access healthy food products that stay fresh for a long time.

In Which Products Is It Used?

Modified atmosphere packaging can be applied in many different food categories:

  • Meat and Meat Products: Fresh red meat, chicken and delicatessen products
  • Milk and Dairy Products: Cheese, yogurt, milk and cream
  • Fruits and Vegetables: Chopped or whole fruits and vegetables
  • Bakery Products: Bread, cakes and snacks
  • Seafood: Fish, shrimp and other seafood

Gases Used in MAP Technology

The gases used in modified atmosphere packaging vary depending on the type of product and the mechanism of spoilage:

  • Nitrogen (N₂): Prevents oxidation by replacing oxygen.
  • Carbon Dioxide (CO₂): Slows down the growth of bacteria and mold.
  • Oxygen (O₂): Preserves the red color in meat products.

Food Safety with Modified Atmosphere Packaging

MAP offers great advantages in terms of food safety. When applied correctly, it reduces the risk of foodborne illness by limiting the growth of pathogenic microorganisms. However, it is of great importance to pay attention to appropriate storage temperatures and to comply with hygiene rules.
